Freeze-dried pineapple is sharp, sweet and very aromatic. Crushed into a glass with mint, it makes a cooler that tastes like a street-side pineapple with chaat masala, without the sugar syrup.
Ingredients (serves 2)
- 2 pouches frudo pineapple slices, crushed
- 10 mint leaves
- Juice of half a lime
- 1 pinch black salt
- 300 ml chilled soda or sparkling water
- Ice
Method
- Add the crushed pineapple, mint, lime juice and black salt to a sturdy glass or jug.
- Muddle for 20 seconds until the mint smells strong.
- Fill with ice and top with soda. Stir gently.
- Let it stand for a minute so the pineapple softens, then serve.
Tip: use still water instead of soda for a calmer drink that works well in a bottle.
